Sodium Hexametaphosphate (SHMP) is used in the beer brewing process :
 
1. Cleaning Agent: SHMP is used as a cleaning agent in the brewing process. It helps to dissolve typical organic soil created by wort, beer, and yeast residues within brewing plant.
 
2. Sequestering agent: SHMP helps to keep carbonate in solution, which can prevent a whitish film from being left on the surface of the plant after the cleaning cycle. This is particularly useful in areas of high water hardness.which can affect the beer's clarity and overall appearance. It does this by binding with metal ions and minerals that can cause the haze, thereby keeping the beer clear. It can also be used to adjust the pH level of the brewing water.
 
3. Prevents Discoloration: SHMP can prevent discoloration in the beverage.
 
4. Improves Yield and Viscosity: When added to beverage production, it can improve  yield and viscosity.
 
5. Protects Color and Flavor: Phosphates like SHMP protect color and flavor by binding metals that can catalyze oxidation of lipid and pigment.
 
So, SHMP plays a crucial role in maintaining the quality of beer during its production process.
